    Our diners gave rave reviews on this seasonal item. Serves 4-6 people. Cook it on a V-rack as directed so it doesn’t steam or boil in its own juices, and use a meat thermometer (also as directed).
    That said, look up online how “done” you like your meat, because if you cook it to 145 ° in the thickest part, you may well find it overdone for your tastes. (I wish the package instructions had varying internal temperature recommendations) After letting it rest for 10 minutes, carve it, and then maybe pop it in the microwave for a quick re-heat.
    This was spendy ($19.99 per pound, so $45 for a roast just over 2 lbs.) but worth the holiday splurge.
