Like the apple iteration, the Apricot version is made for us in small batches by a supplier in the U.K. The recipe for these scrumptious Shortbread Cookies includes freeze-dried Apricots, Apricot juice concentrate, and plenty of Butter—in fact, each Cookie’s composition is nearly one quarter butter, by weight! Before baking them to a tender, golden brown, our supplier makes an adorable, Apricot-shaped impression on the top of each one, adding an aesthetic that hints at the sweet-tart fruitiness embedded in these dense, buttery biscuits.
Their elegant look also makes them a wonderful addition to a dessert board. Of course, they are equally enjoyable one-by-one, right out of the box—perhaps with a sip of your favorite TJ’s tea.”
