    In the good charcuterie (not expensive ) from Spain, We do not use swiss chard, dextrose or lactic acid starter culture in the chorizo or salchichon…the ingredients of those 2 are pork, fat, salt pepper, garlic and paprika …all the rest is not necessary ad those products are cured and well preserved that way…the original tray from Spain had been discontinued an replaced for this…I’m so sorry to hear….the chorizo cantimpalo was amazing and so the salchichon and ok ham….I will have to go somewhere else to buy it now….such a bummer….
