I’m commenting on the brown carton, which is ultra pasteurized and contains gellan gum. It’s the only one available at my store.
Like all ultra pasteurized cream, it doesn’t taste fresh and doesn’t whip up well. I’m sure the gellan gum is necessary because it’s processed the way it is; but I don’t like that, either.
I wish stores would just sell the regular pasteurized cream. It’s clearly what customers prefer, based on the empty spaces on the shelves in stores that carry it.
