Everything I’ve baked with TJ’s flours, both white whole wheat and regular flour have been from terrible to not good. Heavy, not flaky or gummy and all around bad. I’ve used recipes I’ve baked previously using other flours that turned out excellent, but these flours, especially the white whole wheat, are awful. Each time I’ve used TJ’s flours I’ve felt I’ve wasted the other ingredients, money, and time. What is wrong? In the past I used Gold Metal (and another, can’t remember the brand) unbleached white and whole wheat flours with excellent results.
