The old 1000 day gouda was sold with an orange wax coating and it was amazing. Recently (Aug/2021) the vendor or recipe changed and the new version with brown/tan wax is very mediocre. I’ve been driving all Trader Joe’s nearby trying to buy all the older version. I am so bummed out.

I agree with Nancy. I’ve eaten this cheese for years. It had an orangey red or reddish orange wax coating and it was amazing, nutty, crunchy with the usual crystals, and top notch. Now the rind dark brown/tan and the cheese itself tastes much newer, less flavor, less crystallization, different texture when melted. The consistency is grainier and markedly less delicious than the previously carried cheese under the same label. No longer is a good deal for the price, and is not even any longer a particularly good cheese worth the calories or the seeking out of it.

I never had the old so I have nothing to compare this current version to but I absolutely love it. It’s got thes fabulous little salt pockets in it that burst on your tongue. I find it delicious!

The change of wax makes the user experience a little less convenient, but the flavor and quality remains the same. I LOVE this product. It’s a perfect texture between a hard and block cheese and the crystallization and saltiness pair wonderfully with the rich texture. Pairs quite well with green grapes, apples, or unsalted crackers. Highly recommend this product for anyone’s charcuterie board.

The biggest complaint that most have against this is the difficulty in removing the wax. I found that the best way is to get all of it off when you first open it. Simply take a knife and cut a small piece all the way through but not into the wax. Fold the cheese open like a book leaving the wax intact. Carefully pull and peel the smaller piece away from the rest. Now you have a tab to pull off the rest of the wax. Fantastic cheese!
