Very smooth, mild and pleasant with a tangy finish. Like many DOP Italian cheeses, it is required to be made with rennet which may be a deal-breaker for some diets (lacto-vegetarian). I have been using it instead of fontina in a number of recipes, to excellent results. While not a cheap cheese, I say it is an excellent values for a fine quality import of this type. Recommend.
