I thought this was going to be a lot more “eggplant”-tasting or have eggplant chunks in it or something, but it pretty much tasted like regular hummus to me (not that I’m complaining). It was on the thicker side, and not super smooth. Not the best hummus I’ve ever had, but not bad.

I originally bought eggplant hummus from TJ’s because it is the only hummus they sell that doesn’t have canola oil. The flavor is wonderful, and it is thick like it ought to be. I spread it on toast, pile on sauteed greens and mushrooms, and plop a fried or poached egg on top. THE BEST breakfast ever!
